Homemade Hot Chocolate

Sure, you can buy hot chocolate in a packet or tub. But, if you want to be really fancy, have a go at your own!

Servings: 1 mug

Ingredients

  • 1 tsp cocoa powder
  • 0.75 cup coconut milk (almond milk works well too)
  • 1 tsp coconut sugar (stevia or maple syrup works too)
  • 1 square dark chocolate
  • 1 tbsp mini marshmallows
  • 1 tbsp whipped or squirty cream
  • OPTIONAL: 0.5 tsp cinnamon, 1 drop peppermint oil or 2 drops vanilla essence

Instructions

  • Warm the milk in a small saucepan.
  • Add cocoa, sugar and dark chocolate. Stir until thoroughly mixed and chocolate has melted.
  • Add any other optional ingredients from above.
  • Pour carefully into  a large mug and top with cream and marshmallows.

Notes

Note, that you can buy both vegan marshmallows and cream from ASDA, Tesco and Holland and Barrett currently.

  • This week I’ve been taking part in a #whatieatinadayvegan Veganuary special. Today is my day to share my meals! 
I always start the day with warm lemon water. It’s refreshing and gets the digestion going!
Next is a green juice. My go-to for this is cucumber, celery, apple, orange, ginger and spinach/kale. A hit of nutrients!
Mid morning is smoothie time, and today was mango banana. I always add flax or hemp seeds for omega 3. 
For lunch I usually have a loaded salad. But today was Saturday and Ben was hungry! So we had a lovely brunch 😍
Off to my mum’s for dinner. She’s not vegan but always makes great vegan food! We had spaghetti bolognese, garlic bread and apple cake for pudding. My mum actually prefers making vegan cakes as she thinks they taste better 👍

When I was vegetarian, I saw no issue at all with eating dairy and eggs. In my mind, it wasn't meat, and animals produced them anyway. It was that simple for me. ⁠
⁠
Of course, with the rise of social media I was exposed to more animal rights petitions, and undercover footage of factory farms. But STILL, I thought they were isolated incidents, unrelated to the food I was personally eating.⁠
⁠
It wasn't until I finally did my own research (the objective scientist in me wanted to find the evidence and arguments for and against veganism) that it all finally clicked for me. I knew that as an animal lover, I would feel like a hypocrite cuddling my cats and condoning meat, while sitting down to cheese and omelettes.⁠

I phased out dairy and eggs. I looked into the processes behind leather and wool. It wasn't an overnight transition yet before I knew it, I was a fully-fledged vegan.⁠

This quote means a lot to me. Animals are here with us, not for us. Their bodies and 'products' are their own. ⁠

Even now, as a vegan of 6 years, I create meal plans. I also see if there's any prep work I can do while baby is asleep. It keeps me on track.⁠

If you’re THAT person – the one who makes dinner plans when they arrive home from work, you could try advance planning. It is much easier to follow a varied vegan diet if you know what you’ll be eating, have the ingredients in, or even partially prepped. You won’t be tempted by a snack on the way home, because something delicious will be waiting! ⁠
⁠
It doesn’t have to be a week’s worth of complex meals, just a few days ahead. Choose easy options when you know you’re home late, and use weekends for experimentation. Being organised can be handy AND fun!⁠
⁠
Slow cookers also save us from ‘hanger’. Make use of one! Pop a casserole or curry in before you leave the house, so dinner is ready when you’re home. ⁠
Make extra portions of meals to freeze, so you have your own ready meals on lazy days. ⁠
Do online shops too – you can filter for vegan foods at most supermarkets now and have them delivered to your door. ⁠
And if you’re a takeaway fiend, know what the vegan options are beforehand. This works well at restaurants too – know your choices before you go! ⁠

As a new vegan, dairy can be a tough one to completely eliminate from the diet. I remember finding it a bit of a minefield at first.⁠
There's nothing worse than picking up an item off the shelf and finding it has milk in it... especially when it could easily have been made without!⁠
I remember how jammy dodgers used to be vegan, and then they created a new recipe with milk in... just why?⁠

It's worth doing though! Not only is it an industry based on suffering, dairy is not designed for us to consume anyway - it's chemically made for baby cows. It causes many of us health issues such as bloating and IBS too.⁠
But there are so many delicious alternatives out there too, so it’s a great place to make a change. ⁠
