'Egg' Fried Rice
I just love this healthy alternative to the popular Chinese dish! So simple and delicious! If you're looking for calorie deficit, you can even omit the oil and saute in stock.
Servings: 2 people
Ingredients
- 200 g brown rice
- 3 tbsp nutritional yeast
- 1 tsp olive oil
- 150 ml bouillon or vegetable stock
- 80 g mashed firm tofu
- 1 tsp dijon mustard
- 30 g frozen peas
- 30 g sweetcorn
Instructions
- Par-boil the brown rice (and peas if using) in a wok using 100ml of your stock. Cook for 10 minutes.
- Add nutritional yeast, olive oil, 2 tbsp bouillon stock, mustard, peas, sweetcorn and mashed firm tofu. Stirfry for 10 minutes.
- Season and serve!
