'Egg' Fried Rice

We just love this healthy alternative to the popular Chinese dish! So simple and delicious!

  • 200 g brown rice
  • 3 tbsp nutritional yeast
  • 1 tsp olive oil
  • 150 ml bouillon or vegetable stock
  • 80 g mashed firm tofu
  • 1 tsp dijon mustard
  • 30 g frozen peas (optional)
  • 30 g sweetcorn (optional)


  • Par-boil the brown rice (and peas if using) in a wok using 100ml of your stock. Cook for 10 minutes.
  • Add nutritional yeast, olive oil, remaining bouillon stock, mustard and mashed firm tofu. Stirfry for 10 minutes.
  • Season and serve!
