Vanilla Sponge Cake

Simple, soft and delicious! This cake takes just 10 minutes to prep and 30 minutes to cook. The quantities are for one deep cake, but you can split into two smaller sponges and add buttercream in the middle if preferred.

Ingredients

  • 210 g plain flour
  • 250 ml soy milk
  • 200 g sugar (white or coconut)
  • 80 ml oil (olive or vegetable)
  • 0.5 tsp bicarbonate of soda
  • 0.5 tsp table salt
  • 1 tbsp apple cider vinegar
  • 3 tsp vanilla extract

Instructions

  • Warm the oven to 180oC.
  • Add the flour, sugar, salt and bicarbonate of soda to a bowl (don't forget to sift your flour!) and mix.
  • Add the remaining ingredients, and whisk thoroughly.
  • Add the mixture to a greased cake tin (7in diameter works well).
  • Bake for 25-30 mins.
  • Eat alone or add vegan single cream, vanilla frosting or buttercream if preferred.

On the fence or feeling pressure?⁠

People often think that veganism has to be an overnight transition, so end up panicking and backing out. That’s a whole lot of pressure! ⁠

A slow move to veganism is fine, too. It actually took me around 6 months to go fully vegan. First I started to buy plant-based milks and other dairy products, to test them out and find what was easy to get hold of (and tasty too). Next, I focussed on eggs. Finally, I looked at other aspects of my life such as hidden ingredients (e-numbers), clothing and cosmetics. ⁠

By educating myself and swapping out one thing at a time, I found the transition really easy and stayed vegan for good.⁠

What could you reasonably swap out first? Go do it! Small steps really make a difference.⁠

Ingredients:⁠

110 g self-raising flour⁠
0.5 tsp baking powder⁠
0.5 tsp cinnamon⁠
30 g vegan butter⁠
30 g sugar⁠
70 g chopped strawberries⁠
200 ml plant milk (soya is fine)⁠
⁠
Instructions:⁠
⁠
Combine the flour, baking powder, sugar and cinnamon.⁠
Mix in the butter.⁠
Add the strawberries.⁠
Add milk in 20ml increments, using enough to make a soft dough. You may not need to use the entire 200ml. ⁠
Roll out the dough and use a cutter to shape.⁠
Place on a baking sheet and brush with milk.⁠
Bake for 10 minutes and ENJOY!⁠

It’s something that I didn't even consider when I first went vegan. I'm not a big drinker anyway, but when I did have a glass of wine with a meal, or cocktail on holiday, I never even thought twice about it!⁠

Many vegans don’t consider it either, but unfortunately, alcohol can have hidden animal products. Beer can be filtered/fined with isinglass (from fish bladders), wine can contain crushed insects for colouring, and liqueurs sometimes have dairy in them.⁠
